What a wonderful offering of creative and delicious vegetarian dishes at the Eco Action Team’s Third Sunday Supper! Our team served up hearty chili and sides for a meatless menu, the perfect way to cut our food-related climate impacts. Although food accounts for fully one-fourth of the world’s greenhouse gas emissions, meatless meals can cut that impact in half. Try some of the evening's recipes at home to lighten your family’s environmental footprint.
Despite weather issues causing rescheduling, a popular Commanders play-off game, and the St. John’s Men’s Retreat, we had a cheerful and hungry group parishioners who enjoyed the food, wine, coffee and desserts. They remained happily talking (and having seconds!) at their tables until well after 7:00 pm.
Many thanks to all the chefs and helpers: Cathrien Alons, Jessica Banthin, Liz Jones, Bob and Margaret Uhar, Laura Braden, Scott Yeomans, Earle O’Donnell, Tom Kerr, Naseema Sistani, Kirsten Ford, John Ross, and Grace and Mary Helfrich. Thanks also to Chris Martin for his ready assistance in a variety of ways, and to Sari for offering a lovely "eco-grace" before we began the meal.
Be sure to check out the evening's delicious, climate-friendly recipes. Bon appetite!
